Sun-Dried Tomato Pesto


¼ cup toasted pine nuts
½ cup sun-dried tomatoes, packed in olive oil, julienne-sliced
½ cup extra virgin olive oil
½ cup Italian parsley


Add all ingredients to a food processor or Vitamix, and blend until smooth. Store as you would the Pesto.
